Peanut Butter Cookies, 05 December 1999
1 c Crunchy Peabut Butter
1 c Sugar
1 egg
1 tsp baking soda

Preheat oven to 350. Beat together peanut butter and sugar until combined well. Add the egg and baking soda. Roll into 1 inch balls and place on cookie sheets. With tines of a fork flatten balls. Bake cookies until puffed and pale golden, about 10 min.

Chocolate Dipped Hazelnut Shortbread, 03 December 1999
1 c husked hazelnuts
8 tbs (1 stick) butter, room temperature
1/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 c all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
4 ounces good-quality semisweet chocolate

Preheat oven to 350 degrees. Place hazelnuts on baking sheet. Bake until they're a shade darker and fragrant, about 10 to 15 minutes. Remove from oven and set aside to cool.

Crush hazelnuts; set aside. Whisk together flour, baking powder, and salt to blend; set aside.

Cream butter and sugar. Beat in egg. Gradually beat the flour mixture into the butter mixture. Add the chopped hazelnuts and mix until distributed evenly throughout.

Form into 1 inch balls, about 1 tbs, and place on cookie sheets. Press to about half inch thick. Bake until you can start seeing golden brown around eges, about 10 min. Remove from oven and cool on racks.

In a double boiler, melt the chocolate. Put in a piping bag, or parchment paper folded and pointed to about 1/8" hole. Criss cross the cookies with hot chocolate stripes.

Pistachio Cookies (for the holidays), 02 December 1999
3 Sticks of Margarine
2 Packages of Instant Pistachio Pudding
2 1/2 c Flour
Red & Green Food Coloring
Red & Green Sugar

Preheat oven to 350. Cream the margarine, add the Pudding mixture, add the Flour. If this is a red batch of cookies, add about 1/2 tsp of Red Food Coloring, for Green, you can use a bit less than 1/2 tsp of the Green Food Coloring. Once mixed and at the right color, form into 1 inch balls, dip in colored sugar and place on cookie sheet. Flatten with a flat object. Bake at 350 for 8-10 min.

Sparkling Raisin Molases Cookies, 01 December 1999
3/4 c Margarine
1 c Sugar
1 Egg
1/4 c Molasses
2 c Flour
2 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
1/4 tsp Ground Cloves
1/4 tsp Ground Ginger (not fresh)
1 c Raisins

Preheat oven to 350. Cream the Sugar and Margarine, add the egg, blend well. Sift all the dry ingredients and add to the mixture. Add the Raisins. Shape into 1 inch balls and dip into additional sugar, place on cookie sheet sugar side up. Bake at 350 for about 10 minutes.
